Gluten Free Pancakes

Ingredients

  • 1 cup of GF all-purpose baking flour {i used Bob’s Red Mill}
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup coconut milk {other milks can be used: regular milk & almond milk}
  • 1 1/2 tbsp melted butter
  • 1 egg
  • 1/2 tsp vanilla

Directions

  1. mix the flour, sugar, baking powder, & salt in a medium bowl
  2. in a seperate bowl wisk the egg until its frothy, then add in the milk & vanilla, & wisk until well combined
  3. now melt the butter just until its liquidy & quickly stir it into the egg mixture
  4. add the wet ingredients into the dry & stir until there’s only a few lumps left {the mixture will be very liquidy}
  5. pour mixure onto a warm pan using a small ladel or spoon
  6. let it cook until bubbles appear on the entire pancake, then flip and cook until they’re golden brown {unless you use a griddle like me and the pancakes dont get golden :/ }
  7. now its time to eat these yummy pancakes ^_^

*possible toppings: mapple syrup, agave nectar, peanut butter or any nut butter, chocolate chips, banana slices, berries, ect
