Gluten Free Peanut Butter Cookies

I made peanut butter cookies last week but didn’t like the way they turned out. I followed the recipe exactly {which I never do} and was a little ify about the amount of sugar required {1 cup!!} So today I decided to play with the recipe, add a little of this, not as much as that, mix in a little of this, and voila! I made a cookie which turned out to be really yummy if I do say so myself 😉

Ingredients: {note that I estimate the measurements when I’m cooking, so I’m giving you what I estimated} 🙂

  • 1 c smooth peanut butter (I use natural)
  • optional: 1/4 c almond butter
  • 2/3 c brown sugar
  • 2 1/2 Tbsp gluten free all-purpose flour (w/o xanthan gum) {I used my own mixture}
  • 1 egg
  • 1/4 -1/2 c chopped almonds
  • 1/2 c chocolate chips {milk, dark, white, semi-sweet, any would taste great)

Directions:

1) set oven for Image

2) In a medium bowl, mix peanut butter and almond butter just to soften them up a bit. Then add brown sugar and mix well.

3) Next add the flour and stir until well combined.

4) Now add egg and stir really well

5) Add the almonds and chocolate chips and stir

6) scoop some batter into the palm of your hand and roll into about the size of a ping-pong ball

7) place about an inch apart on a stoneware cookie sheet and press with a fork

8) cook for 10-15 minutes until golden on top. Immediately transfer cookies to a cookie rack. Cool completely before eating!
